Coconut Pecan Truffles (No Bake!!)

weddingcake-8bsmallI grew up eating Mexican Wedding Cakes, especially at Christmas.  We lived in Arizona and you could buy them at the grocery store anytime. They are so yummy.  Basically they are a little pecan, melt in your mouth cookie coated in powdered sugar.

Well, I just don’t really eat much of that stuff anymore, but I definitely have fond memories! Now that I am gluten free and tend to eat a healthier diet most of time powdered sugar cookies simply are not on the menu.

But today I was trying to dream up a little Christmas treat and of course my mind went to Mexican Wedding Cakes.  I recently featured a no bake 5 minute Chocolate Chip Cookie Dough Truffle over here, so I thought why not a sort of  Mexican Wedding Cake Truffle??

This is what I came up with, and you know what? they taste almost just like Mexican Wedding Cakes.  The texture is different, being no bake with coconut.  But the flavor is great.  And even though they have a bit of powdered sugar (You could sub in Coconut Palm Sugar if you wizzed it in the coffee grinder (clean it first) for a minute to make it more powdery.  It will change the flavor a bit) they are still on the healthy side.

Made with only a few ingredients they only take a couple minutes to put together.  Pop them in the freezer and you will be eating these yummy little treats very soon!

Ingredients

  • 1 cup chopped pecans
  • 1/2 cup unsweetened shredded coconut (if you use sweetened you may want to reduce or omit powdered sugar)
  • 1/4 cup powdered sugar (we like organic)
  • 1/2 cup unsweetened shredded coconut for rolling
  • up to 1 tbls coconut oil
  • Pinch of salt to taste

Instructions

  1. Prepare a plate or tray with a piece of wax paper
  2. Add all ingredients, except 2nd 1/2 cup shredded coconut into a food processor
  3. Pulse until they form a paste or ball (should take 1 minute or less)
  4. If it is not coming together add up to 1 tbls coconut oil and pulse
  5. Using a spoon take out about 1/2 tablespoon of "dough" and roll into a ball with your hands
  6. Note: Mixture is the texture of a loose cookie dough
  7. Roll each ball in shredded coconut and place onto prepared plate or tray
  8. Place finished truffles into the freezer for at least 20 minutes to harden.
  9. Enjoy straight out of the freezer
  10. Makes about 10 truffles
