I do. Probably a lot of you do, too! Cheese is good in and on almost everything it seems.

I came up with a fantastically easy lunch salad that is perfect by the pool for a lazy day or lunch with friends. I love how it takes an old favorite of chicken salad to a new level. It would be delicious with fresh cut fruit!
My Green Chile Chicken Salad uses Weight Watchers Whipped Cream Cheese instead of Mayo, and it gives it a light and tangy flavor that is a perfect pairing with the Mexican flavors of green chiles, cumin, and cilantro. I even added a little crunch with jicama.
This chicken salad is perfect on a bed of lettuce, stuffed in an avocado or a tortilla wrap.
And you will never notice the difference between Weight Watchers Whipped Cream Cheese because it is reduced fat. It’s real and all natural cheese and tastes great.

This Green Chile Chicken Salad comes together in minutes, and everyone will be impressed.
As a note: if you love fresh onions, this recipe would be great with a chopped green onion. I don’t happen to be a fan of the texture, so I used onion powder.
What is YOUR favorite way to use cheese?
- 2 10 oz. cans of chicken breast chunks, drained well
- ½ cup Weight Watchers Whipped Cream Cheese
- ¼ cup canned green chiles, drained well
- ½ tsp onion powder
- ½ tsp cumin
- 2 tablespoons chopped cilantro
- ¼ cup finely dice jicama
- salt and pepper to taste
- Avocado slices (for garnish)
- Lettuce, for serving
- Add Weight Watchers Whipped Cream Cheese, chiles, onion powder and cumin into medium bowl and stir until combined
- Fold in chicken, jicama and cilantro
- salt and pepper to taste
- (optional) Serve on lettuce leaves and garnish with a few avocado slices and cilantro.
