- Ingredients
- 1 12oz pkg Jack Link’s Wild Side Sausages Original or Jalapeño Sausage, sliced in half then lengthwise into strips (about 16 strips per sausage)
- 1 red bell pepper, sliced thin
- ½ white or yellow onion, sliced thin
- 2 tsp olive oil
- 1 tsp lime juice
- Salt to taste
- 8 corn tortillas
- Optional: Sliced avocado and salsa
- Heat a large pan on medium
- Add 1 tsp olive oil to pan
- Add sliced Jack Link’s Wild Side Sausages to pan
- Cook until brown (about 5 minutes), stirring occasionally
- Remove from pan and set aside
- Add 1 tsp olive oil to pan
- Drizzle peppers and onion with lime juice and salt to taste
- Add peppers and onions to pan
- Cook until brown and soft (about 5 minutes), stirring occasionally
- Remove from pan and set aside
- Heat second pan on medium
- Place 2-4 tortillas in pan (depending on size) and heat until soft (about 30 seconds). Flip once and move to a tortilla warmer
- To assemble:
- Place warm tortilla on plate and stack with Jack Link’s Wild Side Sausages, peppers, onions and top with avocado and salsa if desired.
