Healthy Chocolate Raspberry Parfaits (Top Secret Ingredient!)

Chocolate Avocado PuddingSo I gave you sneak peek yesterday of the healthy parfait I made.. and no one guessed what was in it.. but to be honest, I figured no one would.. it really was hard.

This recipe is also fabulous for getting your picky kids to eat their veggies. The 1st time I served this the family had no idea what the secret ingredient was!

This ingredient:

  • Lowers cholesterol
  • Controls blood pressure
  • Is anti-inflammatory
  • Contains vitamin B6, folic acid, A, B, C, E, and K, copper, iron, phosphorus, magnesium, and potassium

Would you believe the “chocolate pudding” was made of avocados? It was, and you would never know it!!  We are also dairy free so the whipped cream was actually “whipped coconut milk“.

My inspiration for this recipe was in Delicious Living.

Chocolate “Pudding” Parfaits

Ingredients for Pudding
2 large ripe avocados (3 medium or 4 small)
1/2 cup unsweetened cocoa powder
1/3 cup light coconut milk (see note)
1/4 cup sugar (coconut palm sugar is a great healthier alternative)
1-2 packets of White Stevia (see note)
2 tsp real vanilla extract
Pinch of Salt

Add sugar to coconut milk (in measuring cup) to start dissolving slightly. Puree avocado in your food processor. When completely smooth add in cocoa, coconut milk/sugar mixture, stevia (if desired),salt and vanilla. Puree until completely incorporated. Refrigerate until ready to eat (I like to eat the same day).

To serve either eat as is or layer with regular whipped cream or coconut whipped cream (recipe here) and strawberries or my favorite, raspberries!!

Other ideas I have for this are Crème brûlée or chocolate silk pie!!

Notes:
1. If you make the coconut whipped cream and are using full fat coconut milk you can skim the thicker part off the top (where more fat to whip is) and use the thinner liquid for your light coconut milk for the pudding.
2. The sweetness of white Stevia Packets vary- so I would recommend adding 1 packet at a time. If you don’t like stevia either leave it out or add a little extra sugar.
