Gluten Free Apple Crisp (That You Can Serve Company!!)

Apple CrispI am planning on doing a pretty extensive series on Gluten Free Recipes.  It’s a pretty big part of my life, so it seems right to share the recipes here- and try to do them in an affordable way.  I think I am going to call the series:  “GF Food You Can Serve to Company”.

All in all gluten free foods are getting a lot better- but many times they have some unique qualities that friends and family still might raise an eyebrow at- lol. They just don’t always taste or feel quite right.  So I am on a mission to put together some go to recipes that anyone can enjoy on a budget- and I might go as far to say that no one would even know they are gluten free from tasting them.  We”ll see how it goes. But I figure even if you are not gluten free you probably know someone who is and it might be nice to surprise them with something amazing (just make sure if they are celiac that you make sure to ask them how all the food needs to be handled to be truly gluten free!)

I have to say that this recipe was a success.  I would be proud to bring this to my Bible Study!! (although, it would have been even better with a scoop of ice cream!!)

Gluten Free Apple Crisp
4 medium apples, sliced (4 cups)  Granny Smith would be best- but I used what I had on hand. ($1)
1 tsp. lemon juice (optional, best if you end up using a sweeter apple) ($.10)
1/4 cup sugar ($.20)
1/2 cup packed brown sugar ($.40)
1/2 cup fine ground rice flour* (or all purpose flour for non gf) ($.13)
1/2 cup old-fashioned oats (certified gluten free if GF) ($.22)
Pinch of salt (optional)
1/3 cup shortening or softened butter ($.27)
3/4 teaspoon ground cinnamon ($.04)
1/2 teaspoon ground nutmeg ($.03)

Preheat your oven to 375ºF. Then grease the bottom and sides of 8-inch square baking dish with shortening or cooking spray. If using lemon juice, add it and sugar to the sliced apples and mix to coat. Spread them into your baking dish.

In medium bowl, stir together brown sugar, rice flour, oats, salt, cinnamon and nutmeg.  Add shortening or softened butter and work into the dry mixture with a fork until combined. Sprinkle the mixture over the apples.

Bake at 375ºF for 30 minutes or until topping is golden brown and the apples are fork tender.

Enjoy plain or with a scoop of vanilla ice cream.

*make sure you use fine ground rice flour, it will turn out very different if you use regular rice flour- which has a grainy texture. And please know that is a terrible price at Amazon!! I pick it up at my local Thai market for $.99 a bag).
